For all my fellow foodies out there, I've got a delicious recipe for you to try out! This mouth-watering veggie pasta salad is the perfect choice for a light and refreshing lunch or even as a side dish at your next barbecue.
Marshall Munchies — Veggie Pasta Salad
Ingredients:
- 1 pound of fusilli pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can of black olives, drained and sliced
- 1 red onion, chopped
- 1/2 cup of chopped fresh parsley
- 1/2 cup of chopped fresh basil
- 1/2 cup of chopped fresh cilantro
- 1/2 cup of crumbled feta cheese
- 1/2 cup of extra-virgin olive oil
- 1/4 cup of red wine vinegar
- 1 tablespoon of Dijon mustard
- 2 cloves of garlic, minced
- Salt and pepper, to taste
Instructions:
- Begin by cooking the fusilli pasta according to the package instructions. Drain and set aside to cool.
- In a large mixing bowl, combine the chopped bell peppers, black olives, red onion, parsley, basil, cilantro, and feta cheese.
- In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, and salt and pepper.
- Pour the dressing over the pasta and toss to coat evenly.
- Refrigerate for at least one hour to allow the flavors to meld together.
- Before serving, adjust the seasoning with additional salt and pepper to taste.
Veggie Pasta Salad

- 1 can of chickpeas, drained
- 1 can of corn, drained
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup of chopped red onion
- 1/2 cup of chopped fresh parsley
- 1/2 cup of chopped fresh dill
- 1/2 cup of crumbled feta cheese
- 3/4 cup of extra-virgin olive oil
- 1/4 cup of red wine vinegar
- 1 tablespoon of Dijon mustard
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of garlic powder
- Salt and pepper, to taste
Instructions:
- Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the chickpeas, corn, red and green bell peppers, red onion, parsley, dill, and feta cheese.
- In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, dried basil, garlic powder, salt, and pepper.
- Pour the dressing over the pasta and toss to coat evenly.
