Creamy Chicken & Veggie Pasta
Ingredients:
- 1 package (16 oz) Linguine
- 4 tablespoons Butter
- 2 Boneless, Skinless Chicken Breasts cut into small pieces
- 1 large Onion
- 1 large Red Pepper
- 1 large Green Pepper
- 2 cloves Garlic
- Salt and Pepper to taste
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese
Instructions:
- Cook Linguine according to package in salted water.
- While pasta is cooking, melt butter in a large skillet over medium heat.
- Add chicken and onion, cook until chicken is no longer pink and onions are translucent.
- Add Red and Green Peppers, Garlic, Salt, and Pepper. Cook for additional 5 minutes or until peppers are tender.
- Reduce heat and add heavy cream and Parmesan cheese to the skillet. Cook over low heat, stirring constantly, until sauce is heated through and thickened.
- Drain the Linguine and add to the skillet with the sauce. Toss until pasta is coated with sauce.
- Serve hot and enjoy your creamy and veggie-filled dinner.

- 1 pound Boneless, Skinless Chicken Breasts cut into thin strips
- 2 cloves Garlic
- 1 large Onion
- 2 medium Zucchinis, sliced
- 2 medium Yellow Squash, sliced
- 1 Red Pepper, sliced
- 1 Green Bell Pepper, sliced
- 1 can (14.5 oz) Diced Tomatoes, drained
- 1/2 cup Chicken Broth
- 1 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1/2 cup Grated Parmesan Cheese
Instructions:
- Cook Penne pasta according to package in salted water.
- While pasta is cooking, heat Olive Oil in a large skillet over medium-high heat.
- Add chicken and garlic, cook until chicken is no longer pink. Remove from skillet and set aside.
- In same skillet over medium heat, add onion, zucchini, squash and bell peppers. Cook until veggies are tender.
- Add can of drained diced tomatoes, chicken broth, salt and black pepper. Simmer for 2 minutes or until heated through.
- Return chicken to skillet, toss all ingredients together.
- Add cooked Penne pasta to the skillet, toss all ingredients together again.
- Top with Parmesan Cheese, and serve hot for a scrumptious meal.
