Ingredients
- 1 pound pasta (I prefer rotini or fusilli)
- 1 pint cherry or grape tomatoes, halved
- 1 large English cucumber, diced
- 1 large red bell pepper, diced
- 1 large yellow bell pepper, diced
- 1/2 cup thinly-sliced red onion
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh herbs (such as parsley, basil, or cilantro)
Dressing Ingredients
- 3/4 cup olive oil
- 1/4 cup red wine vinegar or apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 small clove garlic, pressed or minced
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly-cracked black pepper
Instructions
- Begin by cooking your pasta according to package instructions in a large pot of generously-salted water. Once the pasta is cooked, drain it in a strainer and rinse it under cold water until both the pasta and the strainer are cool.
- Meanwhile, prepare your dressing by whisking together all of the ingredients in a bowl until combined.
- In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, chickpeas, feta cheese, and fresh herbs. Toss everything together until evenly combined.
- Pour the dressing on top of the pasta mixture, and toss everything together until the pasta salad is evenly coated with dressing.
- Either serve the pasta salad immediately or cover and refrigerate for up to 2 days. If your pasta salad seems a bit dry after refrigerating, you can feel free to toss it with an extra drizzle of olive oil before serving.
