Tortellini Salad
Ingredients:
- 1 pound cheese tortellini
- 1 pint cherry tomatoes, halved
- 1 small red onion, sliced
- 1 small cucumber, sliced
- 1/2 cup pitted kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Dressing:
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Cook the tortellini according to package instructions, then drain and rinse with cold water.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, red onion, cucumber, kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper.
