Oh, hello! Today I want to share with you my favorite pasta sauce recipe. It's a Tomato Vege Pasta Sauce that's absolutely delicious and easy to make. Don't worry if you don't have any Thermomix ® to use, you can easily make it without it.
Tomato Vege Pasta Sauce
Ingredients
- 1 onion
- 2 garlic cloves
- 1 red pepper
- 1 yellow pepper
- 1 carrot
- 1 zucchini
- 1 eggplant
- 1 can of tomatoes (400 grams)
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 tablespoon of balsamic vinegar
- 1 teaspoon of mixed herbs (basil, oregano, thyme, rosemary)
Instructions
- Chop the onion and garlic cloves into small pieces.
- Cut the red and yellow pepper into strips.
- Peel and cube the carrot.
- Cut the zucchini and eggplant into small cubes.
- Heat the olive oil in a pan and fry the onion and garlic until they are slightly browned.
- Add the peppers, carrot, zucchini and eggplant and fry for about 10 minutes.
- Add the canned tomatoes, salt, sugar, balsamic vinegar and mixed herbs and simmer for another 15 minutes.
- Use a blender to blend the sauce until it's smooth.
- Serve with your favorite pasta.
If you like a bit of spice, you can also add some chili flakes to the sauce. It's a great way to add some extra flavor!
Spicy Vegetable Pasta
Ingredients
- 300 grams of pasta
- 1 onion

- 1 yellow pepper
- 1 zucchini

- 1 tablespoon of mixed Italian herbs (basil, oregano, thyme, rosemary)
- 1 teaspoon of chili flakes (optional)
Instructions
- Cook the pasta according to the instructions on the package.
- Chop the onion and garlic cloves into small pieces.
- Cut the red and yellow pepper and zucchini into small cubes.
- Heat the olive oil in a pan and fry the onion and garlic until they are slightly browned.
- Add the peppers and zucchini and fry for about 10 minutes.
- Add the canned tomatoes, salt, mixed herbs and chili flakes (if using) and simmer for another 10 minutes.
- Drain the pasta and add it to the pan with the vegetable sauce.
- Mix well and serve hot.
