This dish is packed with colorful veggies, making it a feast for the eyes and taste buds. Don't worry if you are not a fan of veggies; this pasta dish can make any veggie skeptic a convert.
Roasted Vegetable Pasta
Ingredients
- 3 cups of your choice of pasta
- 1 medium red onion, peeled and cut into wedges
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into rounds
- 1/4 cup extra-virgin olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Preheat oven to 400°F.
- In a large bowl toss together onions, red and yellow pepper, zucchini, olive oil, salt and pepper.
- Spread veggies on a rimmed baking sheet and roast for about 30 minutes, stirring once, until vegetables are tender and lightly charred at the edges.
- Cook the pasta according to the directions on the package, reserving 1 cup of the pasta water.
- In a large bowl, toss the pasta with the roasted veggies and some of the reserved pasta water to create a sauce. Add more of the reserved pasta water if needed to reach your desired consistency.
Vegetable Pasta
Ingredients
- 1 lb. pasta
- 1 large zucchini, sliced
- 1 red bell pepper, cut into bite-sized pieces
- 1 yellow bell pepper, cut into bite-sized pieces
- 1 small onion, chopped
- 5 cloves of garlic, minced
- 1/2 cup olive oil
- 1/2 tsp. salt
- 1/4 tsp. crushed red pepper flakes (optional)
- Parmesan cheese for serving, optional
Instructions
- Cook the pasta according to package instructions.
- While the pasta is cooking, heat olive oil in a large pan over medium-high heat. Add onions and sauté until golden brown.
- Add zucchini and bell peppers and sauté until they are tender but still crisp.
- Add garlic and sauté for an additional 1-2 minutes until fragrant.
- Add salt, red pepper flakes (if using), and cooked pasta to the pan. Toss to combine and heat through.
- Serve hot with Parmesan cheese if desired.
